04 — The Bakehouse

Everything good
happens twice.

Our bakery counter, built on one stubborn idea — bake it, rest it, bake it again.

Biscotti isn't a flavour. It's a method: bake the loaf, rest it, slice it, bake it again until it's dry enough to hold its shape in a hot cup. It was invented for travellers who needed something that survived the journey — which makes it the most Roveshots thing we could possibly bake.

So the bakehouse starts there and keeps going. Biscotti built for dunking, cookies pulled warm with a soft middle, and a cold counter where the dough never gets baked at all.

Bake

Small-batch loaves, in the oven before the grinder is even on.

Rest & slice

Cooled, then cut on the bias — the angle is what gives it that long edge.

Bake again

Back in, low and slow, until it snaps clean and drinks up an espresso.

Baked in-house, in small batches, every morning. Biscotti jars in 6, 12 and 24 — for the counter or the gift box. Eggless and vegan bakes are marked daily.

Antioxidant-rich. Stone-ground whole leaf delivers EGCG catechins in higher amounts than steeped tea.
Slow-release energy. The caffeine absorbs gradually, so it lasts longer and feels gentler.
